Ingredients (Serves 4):<\/strong><\/p>\n

2 red bell peppers<\/p>\n

2 yellow bell peppers<\/p>\n

400 g desalted salt cod<\/p>\n

50 g red onion<\/p>\n

100 g boiled potato<\/p>\n

5 g dried mint (Montosco or similar)<\/p>\n

150 g almond milk<\/p>\n

2 g xanthan gum<\/p>\n

Lemon zest<\/p>\n

30 g coarse breadcrumbs<\/p>\n

Extra virgin olive oil<\/p>\n

Method:<\/strong><\/p>\n

Roast the bell peppers in the oven at 200\u00b0C (392\u00b0F) for 20 minutes. Cover them with plastic wrap and let them cool slightly.<\/p>\n

Thinly slice the red onion and gently saut\u00e9 it in a pan with a drizzle of olive oil. Add the salt cod and cook until it flakes easily.<\/p>\n

Transfer the cooked cod to a bowl along with the boiled potatoes, mint, and lemon zest. Mix until well combined.<\/p>\n

Peel the peppers, remove the seeds, and pat dry with paper towels. Cut them into long strips and wrap them around portions of the cod mixture to form rolls.<\/p>\n

Bake the rolls in the oven at 190\u00b0C (374\u00b0F) for 5 minutes.<\/p>\n

Blend the almond milk with xanthan gum until smooth to create the sauce.<\/p>\n

To serve, sprinkle the rolls with dried mint and coarse breadcrumbs. Spread the almond sauce on the plate and place the rolls on top.<\/p>\n","protected":false},"excerpt":{"rendered":"
